Growing Cassava

When Columbus stepped onto Caribbean shores in 1492, the Taíno people who met him were already eating cassava bread perfected over a thousand years. That same root still anchors island kitchens today, in forms most visitors never realize are connected.

Shoppers and even some growers use “bitter” and “sweet” cassava as if the difference is only about taste on the tongue. It runs deeper than flavor, into chemistry that decides how a root must be handled before anyone eats it.

Yuca and yucca are not just similarly spelled; they share the same word origin. A Spanish term for cassava got misapplied to an unrelated desert plant centuries ago, and the mix-up stuck, confusing gardeners and cooks alike.

Cassava carries a real environmental footprint, but it shifts sharply depending on where and how it is grown. Land use, soil depletion, water demand, and emissions all look different on a smallholder plot than on a commercial starch farm.

Knowing when cassava is ready to harvest saves a farm from two costly mistakes: digging small roots too soon, or waiting until they turn woody. On our plots in Ntigha, the plant itself shows clearly when that moment has arrived.

My grandfather lost cassava harvests to the same problems I fight today: root rot within days, diseases with no name, and buyers who set prices however they pleased. Three generations later, science and hard-won field experience finally offer real answers.

Some seasons, you walk your cassava farm and the leaves have quietly begun to rumple. Other times, you find white insects clustered beneath them. Both are warnings worth taking seriously.

Knowing how to plant cassava starts long before a cutting touches soil, with cleared land, raised mounds, and rains that have settled. Get those three right, and young shoots push through the top of the mound within one or two weeks.
